Ingredients to make Quick Chicken Parmesan
- Boneless, skinless chicken breasts, finally trimmed
- Freshly ground pepper
- Half cup of dry breadcrumbs
- 2 tablespoons freshly grated Parmesan cheese
- Three tablespoons extra-virgin olive oil
- Finally chopped one onion
- One teaspoon garlic mince
- One cup of Crushed tomatoes
- Italian seasoning according to your taste
- One cup of shredded part-skim mozzarella cheese
- Finally chopped basil or parsley or both
Preparation of Quick Chicken Parmesan:
Make 4 portion of each chicken breast and place between pieces of plastic wrap and pound with the smooth side of a meat mallet, we need to make it thin and smooth till you get even 1/4-inch thickness and then rub pepper and then mix combine breadcrumbs, Parmesan and 1 tablespoon oil in a small bowl and put it aside, then preheat the broiler to high.
Now heat one tablespoon oil in a large, ovenproof skillet over medium-high heat and then add half the chicken and cook until golden and then transfer it to the plats and now reduce the heat and repeat with the remaining oil and chicken and transfer the chicken to the plates, now add onion and garlic to the pan and cook until they look tender and remove it from the pan and add crushed tomatoes and Italian seasoning, some salt and pepper and keep stirring for another 2 to 3 minutes and then add fried chicken to the pan and keep mixing with the sauce.
Now sprinkle mozzarella cheese over each piece of chicken and spread the breadcrumb mixture over the chicken and cook until the cheese is melted, it would take no more than a minute and it’s ready to serve now, serve with sauce and basil, and you can add some garlic bread slice too which look super cool with this Quick Chicken Parmesan.
