Nigella Lawson’s Traditional Christmas Cake Recipe
Ingredients To Make Nigella Lawson’s Traditional Christmas Cake:
- Raisins 350g
- Currants 150g
- Glace cherries 50g
- Chopped Pecans 75g
- Bourbon or brandy 200ml
- Butter 150g
- Dark Brown Sugar 90g
- One teaspoon fresh lemon zest
- 2 large eggs
- One tablespoon Black treacle or molasses
- One teaspoon almond essence
- Plain flour 150g
- Ground almonds 75g
- A small pinch of Ground cloves
- Half teaspoon of ground cinnamon
- A pinch of Ground Ginger
- One 18cm round tin or 15cm square
Preheat the oven at 150C/gas mark 2:
Cooking Time: 1¾ – 2¼ hours
Yield: approximately 12 slices

First of all take a large mixing bowl and take all the dried fruit and mix well and then take a saucepan and add bourbon or brandy and warm it a bit and then add all the dried fruits in it and bring to the boil. Now take it off of the heat and let it cool down with lid on and then leave it overnight covered and leave the eggs and butter out of the fridge so that they will be at room temperature for the making of the cake tomorrow.
Now when you start working on cake, preheat your oven to 150C / gas mark 2, and prepare your tin and now we will take butter and sugar together and beat till they become creamy and then add grated lemon zest and beat well. Now add eggs one at a time and keep beating and once they are done add black treacle and almond extract and mix. Now mix dry ingredients together and add soaked fruit and add creamed mixture and mix them thoroughly, but don’t blend, instead fold and add chopped pecans and nuts too.
