I think I have shared more than 20 recipes of cake, but the cake I am going to share today is one of my all time favorite sponge cake, Lemon Cake With Lemon Poppy Seed Buttercream , I love chasse cake so I would not say that it’s my all time favorite one, but if you are a sponge cake lover than this is something that you would love to try , and the cake would be filled with flavor of lemon, I like the aroma of lemon, but I don’t like the citric taste, Lemon Cake With Lemon Poppy Seed Buttercream taste yummy with lemon, so I prefer Lemon zest and when you mix well with granulated sugar for this pound cake, you actually feel the taste in your tongue and if you don’t want to use lemon at all then give essential oils a try, citric lemon essential oil is the best thing you want to try to get this kick of lemon, I believe many of you would hate springform pan since they work clumsy, but for making a thick batter pound cake, you need springform and for that you can use a regular 9-inch round cake pan and it will save actually lots of time

I don’t want to make double layers for home and if I am working for my family cause single layer cakes safe you from all the fuss of stacking and frosting the sides and all other 100s of things, we are making simple Lemon Cake With Lemon Poppy Seed Buttercream with a generous layer of creamy frosting and I bet you will love it and poppy seeds will add a nice crunch and look too, but you don’t really have to add it if you don’t want to , but if you like poppy seeds then you can add one tablespoon to the cake batter too .
Ingredients for Lemon Cake with Lemon Poppy Seed Buttercream
For Cake: –
One cup of unsalted butter leaves it at room temperature
One cup granulated sugar
Zest of one large lemon
Four large eggs
One vanilla bean, seeds scraped, but if you don’t want that then you can use 2 teaspoons pure vanilla extract.
Two cups of all-purpose flour
2 teaspoons baking powder
Small pinch of salt
Almost 4 tablespoon fresh lemon juice, but if you like citric taste then you can add more, it’s up to you.
For Buttercream: –
Half cup unsalted butter
3 cups powdered sugar, super fine powder
Two tablespoons fresh lemon juice with some bits too
One teaspoon pure vanilla extract
Some milk if you needed for consistency
One tablespoon poppy seeds
Instructions to make Lemon Cake With Lemon Poppy Seed Buttercream
Now first of all you need to preheat the oven and place a rack in the center to 350 degrees F and prepare the 9-inch springform pan, you just need to make sure that the sides are higher if you are using the regular one. Now take a small bowl with an electric stand mixer fitted with a paddle attachment, now we will take sugar and lemon zest using the back of a small spoon and that will make your sugar moist and super fragrant and now add sugar to the butter and beat on medium speed until light and fluffy and it will take more than 5 minutes and then it would turn into pale color
Now beat eggs and add in the mixture one at a time and mix them well for 1 minute and now add vanilla extract, if your mixture look off in consistency then its fine, don’t worry; now it is time to add flour.
We will add flour, baking powder, and salt and mix on low speed and then we will add lemon juice and beat to combine and now you need to take a wooden spoon or spatula and mix with hand then pour the mixture in pan and bake for 30 to 35 minutes or until a skewer inserted in the center of the cake comes out clean.
Now we will give it some time to cool down before removing from the pan to cool completely on a wire rack and meanwhile we will make frosting and for that we will take cream and butter, 2 cups of powdered sugar, lemon juice, and vanilla extract and mix it well, until smooth and creamy and then we will add a cup more powdered sugar to thicken the consistency and add a bit of milk or cream for a thinner consistency and when you are done with your frosting add poppy seeds and a bit of yellow food and mix well with spoon and now you are ready to decorate your Lemon Cake With Lemon Poppy Seed Buttercream and leave it in the refrigerator for some time and eat with tea.
