Pasta is one of the easiest and the simplest thing which you can try when you don’t want to eat take away or fast food, the best thing about Lemon & Asparagus Pasta is, it is easy to make and it taste Yuma and lemon make it taste rich and citric since it is Spring so you can get fresh and yummiest Lemon and Asparagus.
You don’t need to cook Lemon & Asparagus, you can put Asparagus with pasta and that is absolutely perfect even when you are dead with laziness, once you start making this yummy Lemon & Asparagus Pasta fresh herbs and lemon brighten the whole deal into oblivion and olive oil make it even yummier and I love using nuts in pastas so I am using pistachios, but you don’t really have to if you don’t want to and if you want to change the nut then you can, so are you ready to make Lemon & Asparagus Pasta? I normally eat Lemon & Asparagus Pasta warm and with some extra lemon, extra chili flakes, but you can use some pasta sauce or cheese too.
Ingredients to make Lemon and Asparagus Pasta with Pistachios & Mozzarella: –
Half pound dried curly pasta
One pound asparagus, I chopped it into large pieces, you can cut as you like
3 tablespoons olive oil
One small cup of mozzarella balls, sliced in half
One cup finally chopped fresh parsley leaves
One cup finally chopped basil leaves
Half or one cup fresh lemons juice
Handful of shelled roasted and salted pistachios
2 teaspoons Bottarga if you want to add or you can skip it all together
Salt and crushed red pepper flakes according to your own taste
Put one large pot of water on heat and bring it to boil and then add good pinch of salt and the pasta and cook until almost done and then add chopped asparagus and cook until the pasta is cooked through and the asparagus is bright green, soft, but still slightly crisp.
Now drain and wash under running water, now put it aside and now you need to take another pot and add olive oil in it and warm it up and then add pasta and asparagus in the pan and toss and then add lemon juice and sprinkle cheese pieces, fresh herbs, pistachios, salt, and crushed red pepper flakes and mix with wood spoon and be very careful, don’t crush or mash anything, be very gentle with everything.
Serve Lemon & Asparagus Pasta with some extra lemon and some chili flakes and I normally serve some cheese sauce too if available.
