Jamaican Pineapple Upside Down Cake is absolutely brilliant, I never know that you can make cake Upside Down too until my sister in law made which was absolutely perfect yet very simple recipe, she is vegetarian so it was kind of eggless, rum less, but when I made it at home, I did add some brandy in it and when I mixed brandy with some glucose and sugar, it tasted nice and smooth, smoky and then my love for Pineapple Upside Down Cake increased , and now I love to make cake in this technique , even if I make small cupcakes, I never forget to put a small pineapple ring and a cherry in the center , it looks like a small yummy flower then and kids love to eat it, even I like it this way, but today we are going to make Jamaican Pineapple Upside Down Cake for all of you and I am sure you all would love it.
Today we are making Jamaican Pineapple Upside Down Cake and it is very rich and very sweet stylish cake for special occasions and dinners and I can tell you that you would love it once you take a spoon full of Jamaican Pineapple Upside Down Cake in your mouth, and if you have fresh sweet pineapple and some pineapple extract too then you would enjoy the aroma and natural freshness of the cake too, but if you use canned pineapple slices then still you will like it.
Ingredients To Make Jamaican Pineapple Upside Down Cake
1/4 cup Butter
2/3 cup Brown Sugar
14-oz caned medium Pineapple Slices
16 whole maraschino cherries
1 1/2 cup all-purpose Flour
2 tablespoon Baking Powder
1/2 tablespoon Salt
1/4 cup unsweetened shredded Coconut
1/2 cup Butter
1/2 cup White Sugar
1 large egg
1 tablespoon Vanilla extract
1 cup Pineapple Juice, you would get some from that can too or you can buy it separately.
2 tablespoon Jamaican Rum or any rum you like
Method To Make Jamaican Pineapple Upside Down Cake
First of all take a small sauce pan and melt butter on a very light heat and keep mixing it and then add brown sugar and keep mixing till it become smooth syrup, now take this mixture and pour it into a 9-inch baking pan and now take your pineapple slices and set it into the pan and put 2 cherries into the hole of each pineapple slice upside down and now put it aside.
Now take a large mixing bowl and gather flour, baking powder, salt and coconut into it and mix and then out it aside, now take another mixing bowl and add cream, butter, white sugar, egg and vanilla and mix into a smooth creamy mixture and then add rum and half of the pineapple juice in it and mix.
Now take flour mixture and mix it with pineapple juice mixture and create cake batter well and keep mixing till it become smooth honey like consistency, never ever over mix the mixture cause it will make butter too warm to become oil like consistency and that is not what we want.
Now pour the batter over the pineapples in the pan, make sure you don’t misplacing the cherries and now we will put the pan in per-heated 350-degree oven for about 1 hour, or until a knife inserted in the cake comes out clean and now we will leave it on the rank to get cool down perfectly and then transfer in the serving dish upside down.
