I am going to share a very simple recipe of Jamaican Bammies Bread today which is one of my all time favorite in Jamaican cuisine, which is not a simple cuisine, it is a mixture of couple of cooking techniques, flavors, spices and influences, and it is basically influenced from the indigenous people on the island of Jamaica, and the Spanish, British, Africans, Indian and Chinese who have inhabited the island. Jamaican cuisine is also influenced by the crops introduced into the island from tropical Southeast Asia. All of these various create the basic rich texture which makes the Jamaican dishes famous but today we are going to make Jamaican Bammies Bread one of my all time favorite bread with seafood.
Jamaican Bammies Bread are very similar to casaba, but not as hard or crispy as casaba, it’s a type of cassava flat bread a bit thicker and a bit softer, you soak them with coconut milk and then frying, steaming or baking them again before serve and I am shearing the recipe I feel perfect to make as a beginner.

Ingredients to make Jamaican Bammies Bread
Two pounds of fresh cassava
A pinch of salt or to taste
2 cups of coconut milk
Oil for frying
Preparation instructions for Jamaican Bammies Bread
Wash and peel the yuca and grate the yuca using the finest section cause we need finest result and then we will use cheesecloth or a clean cotton towel and put all of that in it and squeeze the grated cassava to remove as much moisture as possible and discard the liquid cause we don’t need it, now we will add some salt to the yuca and mix it well, use your hands to break up any lumps and now divide grated yuca into 2 equal parts and set aside.
Now we will put the pan on stock and heat it, we did not add any oil so far, we just make pan heat up now we will put half of the grated yuca mixture in the middle of the pan and stat spreading it out with a spatula or with a flat spoon, it will be 2 inch around and 1/2 inch thick and let it cook until the layer stat getting golden, now flip and cook the other side until golden and set
Now you need to remove it off the pan and put it on the plate, now scrape off any scorched areas and put it in a deep dish and pour the coconut milk in it and let the bammies soak the coconut milk for 10 minutes and now it is done for frying. Put a deep and broad frying pan on the heat and warm up the oil for at least 10 minutes, we need hot oil, about 350 degrees Fahrenheit and now we will fry the bammies well and it’s done.
If you are weight conscious and don’t want to try frying then you can bake it too and for that Preheat an oven to 350 degrees Fahrenheit and put some butter on both sides of bammies and bake in the preheated oven for 15 minutes and Jamaican Bammies Bread is done to serve.
