Directions to make Christmas Fruit Cookies:
We will start Christmas Fruit Cookies with preheating the oven to 400 degrees F and then line a cookie sheet with parchment paper and lightly grease and put the pan aside till we need it, you need to make sure you are using the sheet since the cookies would be really sticky and they would get burned pretty quick too, so once they are done, you have to take them out.
Now you need to take a large mixing bowl and add corn syrup, brown sugar, egg, lemon juice, and lemon zest and mix it with electric mixer well and then mix it with flour, baking soda, cinnamon, cloves, nutmeg, and cardamom, and stir well till it become a sticky dough and then add candied fruits and chopped nuts and mix well, now leave it for just 5 -7 minutes and then start dropping the dough by tablespoons onto prepared cookie sheet, you need to make sure you use same quanta and leave about 4 inches space between each cookies and then take the same spoon and spread dough into a 3 inch circle or the way you want it to be and put it in the oven.
You need to bake in the preheated oven for 12 to 14 minutes and you would see your cookies would start getting browned and firm in front of your eyes and you are done, take them out, they would be slightly soft and fluffy, give them good 1 minutes and then take it out of the sheet and if you feel that they are stuck to paper then you can take them with paper and put on the rank to calm down and they will leave the paper once they get cold.
Enjoy my favorite Christmas Fruit Cookies with your family.
